Italian Trippa Beef Tripe

Beef tripe is the lining of the cow's stomach. Tripe should have a pale; off-white colour and typically requires lengthy cooking to tenderize. Honeycomb tripe is the most tender and can be braised with vegetables; served with tomato sauce or cooked into soup.
